Quarantine Leftovers Vegan Smoky Tomato Fettuccine
This was literally some items I had lying around in the pantry and freezer. This dish took only about 20 minutes to make!! Great recipe to whip up if your in a hurry.
1 pound fettuccine (or similar pasta)
1 can tomato paste
2 tbsp olive oil
1 tsp liquid smoke
1 tsp fennel seed, toast and ground
1 tsp honey
3 cups of water or veg broth
1 cup broccoli, tossed in tsp oil, salt and pepper then roast at 400 degrees for 10 min
1 cup frozen carrots and peas
In a small sauce pot, add tomato paste on medium low heat to a dry pan. You want to cook the tomato paste until it turns a golden rust color, about 3-5 minutes. This will take out any bitter flavor that may be present. Add in the fennel seed, liquid smoke, water and honey. Simmer on low for 15 minutes. The sauce will have a great consistency by then and look like a rich sauce that took you hours to make.....SHHHHH!!!!!!! Finish with 1 tbsp olive oil.
In a large stock pot, cook the pasta in rolling boiling water that has been salted to taste like sea water. Taste it with a spoon, does it remind you of the ocean? Cook until al dente, about 7 minutes. It should still have a chew to it, you will finish cooking in the sauce!
In a saute pan add remaining olive oil and cook the veggies on high for 3 minutes. Toss and serve!!! That's it, you just made a yummy pasta with ingredients you had lying around!
