Chtapatta Chicken with Rice Platter👩🍳
1 tbs paprika powder
1/2 tsp turmeric
Salt to taste
3 tbs lemon juice
1tbs garlic &ginger
2 green chillies sliced
1 kg chicken
2 tbs cooking oil
For spiced yoghurt:
1 cup yoghurt
1tbs cumin seeds crushed
1tsp corriander powder
1/2 tbs chaat maslah
Black pepper to taste
1 tbs garlic paste
1 tbs ginger paste
1/2 kg rice(boiled with salt until 3/4th done)
1 chopped Onion
1/2 tsp garlic paste
1/2 tsp ginger paste
Salt to taste
3 tbs fresh corriander chopped
2tbs mint chopped
1/2 cumin seeds
2 tbs Cooking oil
For garnishing :
Anything salad of your choice
In a bowl, add yoghurt, red chillies, coriander powder, crushed cumin seeds, chaat maslah, turmeric powder, ginger and garlic paste, black pepper powder and mix it well. Now set it a side for later use.
In a bowl, add chicken, garlic&ginger paste, paprika powder, lemon juice, salt and turmeric powder and mix well. Cover the bowl and leave it for 30 minutes. (You can add tandoori maslah instead of paprika powder).
In a frying pan, add cooking oil, ginger and garlic paste mix well. Add marinated chicken, cover and cook on low flame for 8-10 minutes then cook it on high flame until water dries.
Now add 2-3 tbs spiced yoghurt and green chillies, cover and cook on low flame for 4-5 minutes.
Now turn the sides of the chicken pieces and add 2-3tbs more spiced yoghurt, cover and cook for 3-4 minutes, sprinkle some chopped coriander and mint, take it off from the heat and set a side.
In a pan, add cooking oil, onion, ginger and garlic paste, fry it for 2-3 minutes.
Now add the reserved spiced yoghurt, salt, mix it well and cook for 2 minutes.
Add green chillies, corriander and mint mix it well.
Add the boiled rice, mix it well, cover and cook on steam for 7 -8 minutes on low flame.
On serving dish, add cooked rice first then place the chicken on top and garnish it with lemon slices, cucumber cubes or any salad and serve it.
